Foodie Friday-Shredded Pork Taco Edition

During baseball season this recipe for shredded pork tacos is one of my go to easy meals.  And when we are running all around I need easy.  And pigs are from heaven... so that explains why these are so delicious... maybe I should make bacon tacos... HOLY HECK YES...  okay back on subject...

The recipe....

Shredded Pork Tacos-

Ingredients-
2-3 lb pork roast of your choice.
1/2 cup of broth (I used chicken because we all know chickens and pigs are BFF's)
1 small can of green chile enchilada sauce
Flour or Corn Tortillas

And... Your favorite taco toppings.  We use...

Sliced black olives
Guacamole
Sour Cream
Shredded Cheese
Romaine lettuce (shredded)
Diced Tomatoes


Take this and place in Crock Pot...


Then pour this over top...
Cook on high for 4 hours or low for 8 hours.
Then.....

About 30  minutes prior to roast being complete... prep all your taco toppings. 
Then....

Shred your finished roast. Tip-Using 2 forks helps shred with ease.
Then...


Add this to shredded pork and...


Mix well.
And now comes the fun part...


Pile the toppings on your tortilla...


Roll. And...


Enjoy!
