Foodie Friday-Stuffed Bell Pepper Recipe Edition

I know what you are all thinking... Is Stephanie having a secret love affair with her CrockPot?  And does she even own anything else to cook in?  The answer is NO (side note-it totally isn't a secret... I am open with my love) and YES (side note-It's baseball season... the CrockPot is my bestie)

This is another one of my go to easy recipes.  Takes minutes to prepare and is full of flavor. 

Stuffed Bell Peppers... or yummilicious as I like to call them.

Ingredients-


2 lbs of ground turkey-(I guess you could be a rebel and use ground beef)
1 large onion-finely chopped (use your Magic Bullet to do this... you won't be disappointed.)
3 cloves of garlic-minced
1 tsp of Thyme
3 tsp of Parsley
2 tsp of Salt
1 tsp Black Pepper
6 Bell Peppers of your choice (I like the pretty colored ones)
3/4 cup Ketchup
1 tbsp of Worsteshire Sauce (I can't spell)
1 cup Bread Crumbs
2 eggs
1/4 cup of water
Liquid for your crockpot (I use a can of diced tomatos or a 1/2 cup of broth)

Step 1-

Take all the ingredients except for the CrockPot liquid and place in a large mixing bowl.

Step 2-

Blend well with mixer or by hand. 
(side note-it is really gooey if you touch it with your hands)
(side side note-I am not a fand of gooey hands)

Step 3-

Cut the tops off the peppers and take out their little pepper guts.

Step 4-

Use a spoon (or your gooey hands) to stuff peppers until they look like this


Oh so pretty...

Step 5-

Arrange in CrockPot so it looks adorable.  Add your liquid of choice.
(I used a can of diced tomatoes this time)
Cook on High for about 5 hours or Low for about 9 hours.

Step 6-

Serve with your favorite side dishes and ENJOY!
