Salsa Sunday-Cooking with My Malibu and Recipe

I pretty much make the best salsa ever It's true... Just ask my Mom.  And my Mom isn't the kind of Mom who would lie.  She would tell you how bad it sucked if it wasn't good.

I was surprised that I could fit so many canning supplies in the trunk of a mid-sized sedan like the Chevy Malibu.  But about 2 gazillion pounds of fresh fruits and veggies.  A few boxes of jars and a only semi-full trunk later I was home and making THE BEST SALSA EVER!!!!

And I made a little video for your enjoyment.  It includes the recipe and step by step instructions.  But if my voice for some reason makes you want to poke yourself in the ear with an ice pick I have included the instructions below, also.

Ingredients-
35-40 ripe roma tomatoes (peeled and diced) (side note-if you watch the video I show the easy way to do this)
2 green peppers-seeded anddiced
2-3 large white onions-diced
15 cloves of garlic-minced
3-4 jalapenos-seeded and diced
2 bunches of cilantro-chopped
1.5 cups of white vinegar
4 limes-juiced
2/3 cup of sugar
2 tablespoons of salt
7 pint size jars with lids and rims.
Canner

Step 1-Bring diced tomatoes to a boil over medium heat and cook for 30 minutes (stirring frequently)
Step 2-Add all the other ingredients (except cilantro) and cook for 30 minutes while boiling (stirring frequently)
Step 3-Sterilize and prepare jars, lids, and rims (I go over this in the video also)
Step 4-Get your canner ready
Step 5-Add cilantro and cook for 10 more minutes.
Step 6-Ladle into jars and seal.
Step 7-Hot water bath in canner for 25 minutes after it comes to a boil
